The ones I use most that aren't "stock" would be:

Klaxon
S2U2
sMMS
Netflix
Google Maps (love the new Latitude feature..makes finding people easier)
MusicID

And as an engineering student, it's nice to have...

SMathStudio - Can do sine, cosine, roots, squares, etc...useful when I don't have my TI-89 on me.
MSSConverter - converts temp, weight, mass, volume, distance, etc...pretty much everything!

Yea, I use this app a lot for work.  You take a picture and it automatically saves it in PDF format.  Beautiful app if you need that sort of thing.  Works great.
